Chicken and Veggies with Feta
This recipe is really nothing, but something I made the other day. I added a litle sauce to it, but it is optional. I'll post it at the end.
Ingredients.
Yellow squash
zuccini
red bell peper
green bell pepper
Chicken
Feta(already crumbled)Flavored would be best!!
Montreal Chicken Seasoning.(A must!)
A shake of Garlic powder
A shake of Chili powder (optional)
First...
Cut up veggies. into bite size peices.
1 of each...
Yellow squash
zuccini
red bell pepper
green bell pepper
1/2 an onion or more if you like. Set aside.
Cut up some chicken and cook it, about 3-4 chicken breasts, depending on how much chicken you like. (frozen or fresh, doesn't matter)
Cook the chicken, but don't over cook, just until it is not longer pink.
Add the veggies and cook for about 8-10 mins on Med. Heat. Make sure that the veggies don't get over cooked or undercooked. Just take a bite of the sqaush and you will know.
Add the seasonings while cooking. 6-7 shakes of the Montreal chicken should do it.
When done, take off heat. Serve on a plate and top with as much feta cheese as you like.
Now, for the sauce. (optional)
2-3 heaping spoonfuls of Fat Free or light sour cream.
1 can of chopped green chilis
-Stir together in a seperate bowl
-add to the cooked chicken mixture
-heat until warm
Serve with feta! Enjoy!

Easy Low-Fat Key Lime Pie
This recipe just came to me after tasting Key Lime yogurt. I thought, "Wow, this tastes exactly what it says. So... Here is what I came up with.
5 containers of Yopliat Light Key Lime Pie Yogert.
A little lime zest (about 2-3 tbl spoons) optional, but gives it that extra kick!
1/3 cup of Powdered Sugar.
-Mix in a seperate bowl.
-Pour into a ready made graham cracker pie crust.
-Put in freezer for 20 mins to set.
Take out and top with light or regular wipped cream and add a little more lime zest for garnish. Enjoy! I will try to post a picture when I can!

New Moon by: Stephenie Meyer from the Twilight Series


I thought it would be fun to list all the books that I am reading and ones that I have read in the past that are worth sharing. Hopefully with my efforts I can start a book club in my new hometown! The book I just recently finished was New Moon by Stephenie Meyer which is the second book in the Twilight saga. When I first decidedto read Twilight I was skeptical, anything about vampires kind of turned me off. When I did finally read it, I was amazed at the imagination this writer had and the passion!! It was a vampire story unlike I had ever heard. Of course it is a very popular book and is going to be turned into a movie! New moon wasn't as exciting as Twilight was, but it still was fun to read becuase it was another chapter in the story. It brings out another character, Jacob, more in New Moon. As you finish this book, it makes it exciting to start the third, eclipse. I am going to wait a little while before strating Eclipse (yes I know, I'm not a screaming fanatic who's obsessed with Edward and his hipnotic passion!) okay maybe a little! But I like to pace myself and save the best for last! I really like young adult novels too, usually ones that have won some kind of award. I would highly reccommend Reading the Twilight Series, especially before seeing the movie!! There is a certain feel that the author gives through her writing that I don't think the director will be able to portray. It will be interesting to see it from the directors point of view, but at least I will already have my own feeling about the characters and the story.
